I have been wanting to be able to eat cornbread for years but most of the cornbread mixes on the market have wheat flour already added in! When I found Bobs Red Mill Cornmeal I was very excited! You can find this online or at your local health food store or at your local grocery store. Bobs Red Mill is a great company and has many other great flours (not all gluten free but still great). I used the recipe on the back of the packaged with a few substitutes for the dairy, butter, and flour. This has eggs so it is not vegan.

MY RECIPE
*1 CUP BOB'S RED MILL MEDIUM GRIND CORNMEAL
*1 CUP Arrowhead Mills Gluten Free All Purpose Baking Mix (Flour)
*1/2 tsp. SALT
*3 tsp. BAKING POWDER
(I added less baking powder because the flour had some in it. I really guessed at this but it came out great so I guess it worked)
* I LEFT OUT THE SUGAR
* 1 EGG
*1 CUP VANILLA RICE DREAM (Milk)
1/4 CUP Earth Balance Natural Soy Free Buttery Spread (Butter)
I did not have a sifter so I just mixed the dry ingredients together and I did not have a blender but I used a whisk and it worked great. I greased my pan with the buttery spread and followed the rest of the recipe as it was written.
VEGGIES
*FIVE CARROTS CHOPPED
*1/2 RED ONION CHOPPED
*THREE LARGE CLOVES GARLIC
*1/2 CAN PINO BEANS
*ONE ZUCCHINI SLICED AND THAN CUT INTO QUARTERS
Chop all veggies and stir fry in a pan with some olive oil
(you can use more veggies if you want to make a larger amount. This serves about two people)





That's awesome! I'm so glad there are more and more options these days for people who need or want to eat gluten free. One of my sister's friend's has severe reactions to gluten and in college the poor kid could barely have anything at all. Just in the past 5 years even there have been so many other options popping up!
