This Pizza is a dream come true for me! It is tomato, wheat, gluten, dairy, corn, and soy free. The most important part of this pizza is the red pepper sauce. It is a little involved to make but totally amazing!
SAUCE
1. Five or Six Red Peppers
2. Olive Oil
3. Half an Onion
4. Five Carrots
5. Four Cloves Garlic
1. Cut peppers in half
2. Coat backs of peppers in olive oil
3. Place on a cookie sheet covered with foil backside up
4. Set oven to Broil and cook until pepper skins are blackened
5. Place peppers in a bowl and cover with plastic for 30 min to an hour
6. Slice Carrots.
7. Chop Onions, and Garlic
8. Stir Fry Carrots until they are slightly browned
9. Add Onions and cook until onions are clear
10. Turn off heat and add in Garlic
11. Peel the skins off the peppers
12. Blend peppers in blender with one half of stir fried veggies
13. Pour into a pot on the stove and add the other half of veggie
14. The sauce will be very thick and a little like a paste.
CRUST AND TOPPINGS
1. For the Crust I used Sami's Bakery Millet and Flax Pizza Crust. It is wonderful!! It is super tasty and wheat free!
2. For the Cheese I used the best non dairy cheese ever: Daiya Vegan Cheese Mozzarella!!
3. We added mushrooms, onions, more peppers, and olives
4. You can use, at this point, any topping you might normally use on a pizza
5. Enjoy!!
