LAUGHING WILLOW'S KITCHEN CORNBREAD AND VEGGIES

Laughing Willow's Kitchen features gluten, soy, dairy, peanut, meat and yeast free and sometimes vegan, recipes and packaged foods.  

I have been wanting to be able to eat cornbread for years but most of the cornbread mixes on the market have wheat flour already added in!  When I found Bobs Red Mill Cornmeal I was very excited!  You can find this online or at your local health food store or at your local grocery store.  Bobs Red Mill is a great company and has many other great flours (not all gluten free but still great).   I used the recipe on the back of the packaged with a few substitutes for the dairy, butter, and flour.  This has eggs so it is not vegan.

MY RECIPE 
 *1 CUP BOB'S RED MILL MEDIUM GRIND CORNMEAL

*1/2 tsp. SALT
*3 tsp. BAKING POWDER 
(I added less baking powder because the flour had some in it.  I really guessed at this but it came out great so I guess it worked)
* I LEFT OUT THE SUGAR
* 1 EGG
*1 CUP VANILLA RICE DREAM (Milk)

I did not have a sifter so I just mixed the dry ingredients together and I did not have a blender but I used a whisk and it worked great.  I greased my pan with the buttery spread and followed the rest of the recipe as it was written.  


VEGGIES
*FIVE  CARROTS CHOPPED
*1/2  RED ONION CHOPPED
*THREE  LARGE CLOVES GARLIC
*1/2 CAN PINO BEANS
*ONE ZUCCHINI  SLICED AND THAN CUT INTO QUARTERS
Chop all veggies and stir fry in a pan with some olive oil
(you can use more veggies if you want to make a larger amount.  This serves about two people)

★ ASHEVILLE TRIP ★ DAY TWO ★ PART TWO

For lunch on our second day we ate at Chai Pani (indain street food).
It was so great!!!  Above is the Potato Uttapam.  A uttapam is a crepe made with rice and lentil flour with a variety of toppings that is served with sambar (vegetable stew made with lentils and tamarind) and coconut chutney.  The potato uttapam comes with potato hash with mustard seeds, onions & cilantro.  It is both vegan and gluten free!  Chai Pani has many vegan/gluten free items on their menu and they where super nice and helpful when I told them what I was not able to eat!!  The Food is Amazing!!!



This is the 2nd dish we got.  It is a Corn Bhel: Fresh corn, onions, cilantro, potato, tomato, cucumber, puri crisps tossed in house made roasted cumin/lime dressing.  It is Vegan but we where able to get it gluten free as well and the gluten item was not missed at all.  It was wonderful!!

We fell in love with Firestorm Cafe and Books! We went two times in our short visit and both times we felt like we could have hung out for hours just reading books and drinking Almond Milk Chi!  Yes! Another place where a non-dairy alternative can be find! (just have to request it)





Firestorm is a coffee shop, book store and they have events like music and game night. It is very cool because it is worker owned and operated!  Each worker-owner is responsible for both weekly shift work and a share of managerial duties.  Decision making is achieved using a formalized consensus process in which each participant has equal weight!

Manteo Farmer's Market End of Season
